It’s “I LOVE Veggies Week” here at The Village Homestead! I’m a mom of two girls who are 5 and 7 years old. One has many food allergies and also happens to be a very picky eater. My other daughter seems to only like food that her older sister won’t eat. Making meals has been a challenge for so many years!
Summer is headed our way and with it will come baskets of fresh, delicious produce. I can’t wait. My children? They don’t care. I want to help change that attitude, so I’m launching a week of learning about vegetables. Together we’ll learn about the vitamins and nutrients that foods contain (or don’t contain) and find out why it’s good to eat veggies. Maybe this will make them want to gobble up those green beans on their plates a little faster!
To start, I had them list their favorite foods. They’ll learn more about the nutrient content of those foods before we move on to fresh vegetables.

Ice Cream (non-dairy)
Pasta with olive oil or Earth Balance
Boca Chicken Patties
Toast with Tofutti Cream Cheese
Macaroni & Cheese
Carrots (cooked and raw)
Soynut Butter on crackers or bread
